Fried egg

Eggs are not only healthy, they are also absolutely versatile. Whether hard-boiled eggs, poached eggs, scrambled eggs, omelets, or fried eggs – you can enjoy eggs in many different ways. So cooking an egg can't be that difficult… or can it?

The art of presenting a perfect breakfast egg is a story in itself. However, to really succeed, there are a few rules to follow.

This is how a fried egg is guaranteed to succeed!

  • A non-stick pan is heated; an egg does not need to be in the pan beforehand. The egg can be cracked into a cup, which makes it easy to fish out any shell fragments.
  • The temperature of the pan should not be too hot – a medium temperature is just right, otherwise the edges of the egg will burn too quickly. Now add a little oil or fat.
  • Important: let the egg white flow into the pan first, then the yolk, so the yolk is less likely to burst.
  • Once the egg has set all around, it is cooked and ready to eat. Season with a little salt and pepper – simply delicious.

Extra tip: Instead of fat, you can also Water use to fry fried eggs. Simply add some water to the pan and as soon as it is hot and steaming, crack the eggs into it.

Cooking tip: a slice of bread spread with a little butter, a slice of salami or ham on top, as well as a slice of cheese and finally the egg as a topping make the so-called “Strammer Max”.

The best tips for eggs

  • Eggs should never be placed in boiling water while too cold. Therefore, take the eggs out of the refrigerator early, let them reach room temperature, and only then add them to the water. Why? The eggs could burst due to the large temperature difference.
  • If you are in a hurry and don't have time to warm them up, simply put the eggs in the pot with the water and turn on the stove; this way, the eggs warm up slowly and do not burst.
  • To cool the eggs down faster, you can warm the cold eggs under lukewarm running water.
  • Piercing the eggs on the bottom (where the air pocket is, by the way) also prevents them from bursting.
  • If an egg does burst, it still helps to add a pinch of salt to the water – this way, the egg will not leak out of the shell, or only minimally.
  • After the cooking time, you should rinse the eggs with cold water so that the shell can be removed more easily. However, that is not entirely correct: if eggs are difficult to peel despite good rinsing, the eggs are simply too fresh. Only eggs that are about 14 days old can be peeled perfectly. This is because the pH value inside has increased. The carbon dioxide escapes to the outside over time, the membrane and the shell separate from each other and therefore no longer stick together.

How do I prepare the perfect scrambled eggs?

Of course, the classic scrambled egg is also very popular – to create an excellent dish from eggs, you need some knowledge.

Per person, you should estimate two eggs. These are placed in a bowl and beaten with a little low-fat milk or a little sparkling water using a fork. Tip: it is not necessary to whisk the eggs completely; it is sufficient if the yolk gradually mixes with the white. Now add a pinch of salt, a little pepper, and some nutmeg. Finally, the egg mixture can be added to a pan with a little melted butter.

Note: many people cook scrambled eggs until they are completely dead. However, that is not necessary: the egg should set briefly and remain juicy inside. Proper stirring is unnecessary for scrambled eggs; you can simply push the egg mixture back and forth with a spatula – and the perfect scrambled egg is ready.

Seasoned with a few fresh herbs, perhaps strips of ham, tomatoes, mushrooms, or scampi, various delicious variations can be achieved.
