Which meat is suitable for skewering?
The meat should cook relatively quickly, but it must not dry out. Skewers are usually grilled over high direct heat, and not every type of meat is suitable for this. Here is a list of which meat is best suited for skewers:
- Turkey and chicken: boneless leg, inner fillet, breast
- Pork: loin, slightly marbled shoulder, tenderloin
- Beef: roast beef, sirloin, tenderloin
Extra tip:If you prefer it flavorful and as juicy as possible, choose slightly marbled pieces. If you prefer the meat to be tender and mild, then opt for fillet or tenderloin, though these will be less juicy.
Marinating meat for skewers
Since the pieces of meat have a large surface area, they are perfect for marinating. To do this, cut the meat into bite-sized pieces and coat them completely with the marinade in a bowl or a freezer bag. If you also want vegetables on the skewer, marinate the vegetables together with the meat. After marinating, place the pieces on the skewers and finish grilling.
Extra info:For skewers, it is sufficient to marinate the meat shortly before grilling. Most marinades do not penetrate very deeply into the meat. Salting, on the other hand, changes the meat and makes it juicier when cooked: therefore, salt the meat up to 24 hours before grilling.

It is essential to cut the meat pieces into equal-sized, if possible rectangular, shapes so that they can cook evenly. Simply slide sausages onto the skewer lengthwise. If the meat is very thin, fold or roll it once and then place it on the skewer.

As with meat, choose vegetables that do not take too long to cook.
