Recipe for zucchini muffins or zucchini cake

I know many recipes with zucchini that are savory. But zucchini also tastes very good in sweet baked goods. I tried this delicious recipe at a friend's house and copied it down right away. We really enjoyed these muffins – and yes, all the children ate them too. The great thing is that the little ones eat vegetables here quite incidentally and perhaps, for once, don't complain about what that green stuff on their plate is. So, definitely give it a try:

Recipe for zucchini muffins or zucchini cake

Ingredients:

  • 400 g grated zucchini
  • 3 eggs
  • 150 g sugar
  • 200 ml sunflower oil
  • 1 tsp cinnamon
  • 40 g ground hazelnuts
  • 1 packet vanilla sugar
  • 150 g wheat flour
  • 150 g whole wheat flour
  • 1/2 pkg baking powder
  • Muffin tin

Instructions:

Wash the zucchini thoroughly and grate finely. Meanwhile, preheat the oven to 170 °C top and bottom heat. First beat the eggs with the sugar until frothy, then gradually add the sunflower oil. Now add the cinnamon, hazelnuts and vanilla sugar and mix well. Then stir in the grated zucchini and slowly add the baking powder and flour. Fill the batter into muffin tins and bake in the oven for approx. 45 minutes.

You can also spread the batter on a baking sheet lined with parchment paper or bake it in a saddle-of-venison mold. You can garnish this zucchini cake with melted chocolate.
