It always tastes best at Mom's. The same goes for pastries and cakes. I got this recipe from my mom, who in turn got it from her mom, and hopefully it will continue like this. Now I would like to pass it on to you, because the apple cake with nuts simply tastes good:
Recipe for Mom's apple cake with nuts
Ingredients:
- 200 g margarine
- 200 g sugar
- 1 pinch of salt
- 5 eggs
- 200 g flour
- 2 tsp baking powder
- 75 g almonds, chopped
- 750 g apples
- 3 tbsp lemon juice
Instructions:
Cake base:
Beat 100 g margarine until very fluffy, then add 100 g sugar, the pinch of salt, and 2 eggs and stir until the sugar has dissolved. Now add the flour and baking powder and mix well. Pour the dough into a greased springform pan (ideally 26 cm) and spread it up the edge a little. This is easier with moistened hands.
Topping:
Beat 100 g margarine with 100 g sugar and the 3 eggs until fluffy. Add the chopped almonds and mix well again. Peel the apples and grate them coarsely. Drizzle with the lemon juice and add to the egg mixture. Spread the topping over the cake base and bake in a preheated oven at 175 degrees (top and bottom heat) for approx. 60 minutes.
