Curd cheese cakes (Topfentorten) are very delicious and therefore very popular in recipes. Unfortunately, it can happen that the beautiful curd cheese cake collapses after baking. Here I have a little tip so that this will not happen to you again:
Leave the curd cheese cake in the oven
The curd cheese mixture will not collapse if you leave the cake in the switched-off, open oven after baking until it has reached room temperature. This is because the cake collapses due to the sudden change in temperature.
Curd cheese cake with gelling sugar
The curd cheese cake will also not collapse after baking if you bake it with gelling sugar instead of normal granulated sugar. This also makes the dough fluffier and it literally melts on your tongue.
