Christmas cookies with marzipan are very tasty. Here I have a very simple but good recipe for Mandelinchen, which really taste nicely of marzipan:
Christmas cookies – Marzipan cookies – Mandelinchen
Ingredients:
- 200 g marzipan paste
- 100 g almonds, ground
- 1 egg white
- 75 g powdered sugar
- 1 tbsp lemon juice
- 1 tbsp almond liqueur (or lemon juice)
- 75 g flour
- 1 egg yolk
- approx. 30 almond halves
Instructions:
Preheat the oven to 160°C top and bottom heat. Cut the marzipan into pieces and knead with the almonds, egg white, powdered sugar, lemon juice, almond liqueur (if children are eating, add another 1 tbsp of lemon juice instead) and flour into a smooth dough. Shape the dough into a roll. Cut the roll into 30 slices and shape into balls. Place these on a baking tray lined with baking paper. Whisk the egg yolk and brush the cookies with a brush. Finally, place an almond half on each cookie and bake in the oven at 160°C for 10-12 minutes until light.
Extra tip: You can also brush the Mandelinchen with an egg white. Just whisk the egg white a little with a fork and apply with a brush.
