Recipe for cookies shaped like Christmas trees

Want to bake something other than just 'normal' Christmas cookies and create something truly special? Then I have a great recipe for you here. I received these amazing cookies in the shape of Christmas trees from a dear friend:

Recipe for cookies shaped like Christmas trees

Ingredients (for 10–20 pieces):

  • 3 eggs
  • 1 pinch of salt
  • 75 g sugar
  • 100 g ground almonds
  • 25 g flour
  • 25 g cornstarch
  • 250 g white couverture chocolate
  • 200 g ground pistachios
  • 1 tube of red decorative icing
  • Silver sugar pearls
  • 10-20 paper molds

Instructions:

Preheat the oven to 180°C (356°F) top and bottom heat. Cut 10–12 circles with a diameter of about 16 cm out of baking paper. To shape the paper into a cone, make a single cut from the edge to the center and secure it as a cone with a paperclip. It is best to place these paper cones tip-down in small ovenproof cups or molds.

Separate the eggs and beat the egg whites with a pinch of salt until stiff. Now gradually sprinkle in the sugar. Then stir in the egg yolks. Mix the flour with the almonds and the starch and fold into the egg white mixture. Fill the dough into a piping bag and pipe it into the paper cones. Bake the cups in the hot oven at 180°C for 15-20 minutes.

Remove the finished cones from the oven and let them cool upside down on a wire rack. Melt the couverture chocolate in a hot water bath. Pour the pistachios into a large bowl. Once the almond sponge cones have cooled, remove the baking paper. Brush the entire cone with the liquid couverture and roll it in the ground pistachios. Use a small spoon to add the remaining white couverture to the tip of the cone. Pipe small red balls onto the trees with the decorative icing and place the small silver sugar pearls on top.

Extra tip: wrap nicely in transparent foil – ideal as a small gift before Christmas for dear friends!
