Surprise muffins with chocolate

When guests come over, I love baking cakes or muffins. I prefer neutral muffins with chocolate that I can decorate to my heart's content. This is one of my favorite recipes, especially when children are visiting, as a piece of chocolate is hidden inside the muffin. These muffins are simple and very quick to prepare. Of course, these muffins can also be decorated very well, which my daughter is always very eager to help with. Here is the recipe, just try them out, they really taste very good:

Surprise muffins with chocolate

Simple and quick recipe for muffins with an extra:

Ingredients

  • 200 g flour
  • 50 g ground almonds
  • 3 tbsp cocoa powder
  • 2 1/2 tsp baking powder
  • 2 eggs
  • 100 g sugar
  • 80 ml oil
  • 300 g yogurt (buttermilk or sour cream also work)
  • 12 small chocolates (e.g., small chocolate bars like Milka Naps, Lindt balls, Toffifee, etc.)
  • possibly sugar decoration, Haribo gummies, or 100 g couverture chocolate

Instructions

Preheat the oven to 180°C (356°F) top and bottom heat. Grease the muffin tin with paper liners or oil and place it in the refrigerator. Mix flour, almonds, cocoa, and baking powder in a bowl. Whisk eggs, sugar, oil, and yogurt in another bowl. Add the flour mixture to the egg mixture and stir into a smooth batter. Pour the batter into the muffin tin and place 1 piece of surprise chocolate into each muffin. I like to use Milka Naps or, after Christmas or Easter, small chocolate figures. Press the chocolate into the batter so that it is no longer visible.

Bake in the oven at 180°C (356°F) for approx. 15 – 20 minutes. Then let them rest in the tin for 5 minutes before removing them. The muffins can now be decorated to your heart's content. My daughter and I like to use sugar sprinkles or gummy bears. You can also garnish the muffins with a drizzle of couverture chocolate.

Extra tip:If no children are eating them, the surprise muffins can be filled with Mon Cherie or small liqueur bottles.
