A must at a children's birthday party, besides gifts, is a cake for the birthday child. For a girl, a cake with a Barbie becomes a dream gift.

At the birthday party for the daughter of a dear friend, I couldn't stop marveling: a beautiful cake and a Barbie inside it too. A true work of art, so of course I had to know how to make such a great cake. Curious? Here are the instructions for you too:

Barbie cake for children's birthday

For the Barbie cake, you need 2 bundt cakes in different sizes or 1 bundt cake and 1 cake, because the Barbie has such long legs. My friend used 2 bundt cake pans of different sizes. If you don't have 2 bundt pans, simply bake half the amount in the same pan.

In terms of taste, you can simply use your favorite bundt cake recipe, just be careful, it should be one that is quite firm and stable.

The fondant can be bought ready-made in baking shops or at Amazon , or prepared yourself. For this work of art, ready-made fondant and colored marzipan were used.

Extra tip: This cake is very elaborate, so feel free to plan several hours of preparation time. Especially if you have never worked with fondant before.

Ingredients:

For the dough:

  • 6 eggs
  • 140 g sugar
  • 120 ml sunflower oil
  • 125 g flour
  • 3 tsp cocoa
  • 1 ½ tsp baking powder
  • 150 g chocolate, melted

For the ganache:

  • 400 ml heavy cream
  • 600 g milk chocolate

For the decoration:

  • approx. 1 kg fondant in two colors
  • Sugar pearls, sugar flowers etc.
  • Barbie doll
  • Plastic wrap
  • Aluminum foil
  • Small rubber bands
  • parchment paper
  • Cake board

Instructions:

Undress the doll below the waist and wrap it well with cling film up to the waist. If the Barbie has very long hair, wrap it tightly around the head with aluminum foil and small rubber bands so that nothing gets dirty.

Ganache instructions

First, prepare the ganache immediately, as it needs to be chilled for a few hours. Chop the chocolate into fine pieces; if you have a mixer, you can do it in that. Bring the heavy cream to a brief boil and add the fine chocolate. Let everything rest for a moment, and only then stir everything well into the corners of the pot with a wooden spoon. When it is nicely mixed, blend the mixture with an immersion blender. Always immerse the blender well; no foam should form. Chill the ganache in the refrigerator for about 2 hours, but stir it occasionally.

Bundt cake instructions

Preheat the oven to 180°C (356°F) convection. For the bundt cake, whisk the eggs with the sugar for about 7 minutes with a mixer until frothy. Gradually add the oil to the egg mixture. Mix the flour, baking powder, and cocoa and add them in a few stages. Stir in the melted chocolate and mix everything into a smooth dough. Fill the dough into 2 or, if you have them, 3 smaller baking pans and bake at 180°C (356°F) convection for about 40 minutes. After the baking time, let the cakes cool down.

Place the bottom bundt cake on the intended cake board. To keep the cake board clean, place some parchment paper between the bundt cake and the cake board. If you like, you can now dress the Barbie above the waist with fondant or put on a suitable top.

Take the ganache out of the refrigerator and whip it with a mixer. The ganache will first become thick, then creamy, and after a short time lighter and firmer. Now the cream should not be whipped for too long, otherwise the butter will separate from the liquid components and become grainy. Finally, just stir the cream briefly with a spoon again, then it is ready for use.

Assembling the cake

Now coat the cakes all around with ganache and stack the tiers. After everything is coated with ganache, chill the cake briefly.

Then take the cake out of the refrigerator and place the Barbie into the hole in the middle. Use the remaining ganache to smooth out the transitions or unevenness and pull it up to the Barbie's waist. Now chill the cake again.

In the meantime, knead the fondant until soft and roll it out circularly between parchment paper or on powdered sugar to a thickness of about 3 mm. Cut out a 'hip-width' hole in the middle (best with a glass) and use a knife to make a straight cut from the edge of the circle to the outer edge. Depending on your taste, a larger part of the dress can be cut out here, as in the picture, so that the front part of the dress is equipped in a different color.

Take the chilled cake out of the refrigerator and apply the fondant around the waist of the Barbie cake. Moisten the spot where the fondant overlaps a little and smooth it out. Cut off excess fondant with a knife right at the bottom or on the side. Also, cut out a small circle with fondant for the transition, cut a hip-sized hole, and make a straight cut to the edge. Place this smaller fondant circle directly around the Barbie's waist so that no transitions are visible anymore.

Decorating the fondant dress

After the fondant dress is finished, the cake can be decorated to your heart's content. Here, small flowers can be made from fondant. To do this, cut out circles from the fondant with a small round cutter. Place an even smaller circle cutter in the middle and cut out small flower circles with a stick. If you like, you can also use ready-made sugar flowers or colorful sugar pearls for the decorations.
