Sugar and salt are very important ingredients in cooking. Usually, salt is used for savory dishes and sugar for sweet ones. However, it is just as important to use them the other way around. Why, you ask? The explanation is actually quite logical: humans can basically distinguish 5 tastes: salty, sweet, sour, and bitter, as well as umami (a savory aroma). We have dishes that simulate several different taste receptors at the same time, and additions of salty ingredients often enhance the sweet taste.
Salt in sweet dishes
A small pinch of salt in sweet dishes enhances the aroma and makes the dishes taste harmonious:
- Pancake batter
- Stiffly beaten egg whites

- Coffee (is then no longer as bitter)
Sugar in savory dishes
- Dressing
- Sauces
- Soups (e.g., tomato soup)
- Dips
- Spreads
- Ketchup
Caution:Sugar has many negative effects on our body. It makes you tired, lethargic, depressed, and sick. Use as little household sugar as possible and rely more on natural sugar, as found in fruits or vegetables.
