My daughter wanted a princess-themed cake for her birthday. For health reasons, I unfortunately couldn't make the cake myself, but my very dear friends conjured up a truly wonderful cake that I didn't want to keep from you:
Princess cake for children's birthday
Ingredients:
- 130 g butter
- 110 g powdered sugar
- 6 egg yolks
- 6 egg whites
- 130 g chocolate
- 130 g flour
- 110 g sugar
- approx. 6 tbsp apricot jam
- approx. 500 g fondant, white
- Powdered sugar
- 1 food coloring in pink (I used the gel colors from allestorte.at: Gel color set)
- Food coloring pen in pink
- Sugar pearls in metallic pink
- edible wafer butterfly
- non-edible gemstone in pink
- Baking pan 26 cm, or square
- Fondant cutters: flowers, letters
Instructions:
Preheat the oven to 180°C (356°F) top and bottom heat and grease the baking pan with butter and dust with flour. Beat the egg whites until stiff, then add the sugar and continue beating until it becomes a glossy mixture. Warm the butter until lukewarm and cream it with the powdered sugar. Gradually add the egg yolks and mix well. Melt the chocolate in the microwave or a water bath and add it to the egg yolk mixture. Now fold in the beaten egg whites and mix well. Finally, add the flour and mix everything into a batter. Pour the entire mixture into the baking pan and bake at 180°C for about 1 hour.
Extra tip: If the batter has domed a little while baking, simply turn the cake onto a plate while it is still warm; this will make everything nice and smooth again. Let the cake cool down completely.
Optional: Cut the cake horizontally with a knife. Heat the jam in a water bath and spread it on one half of the cake. Put the cake back together.
Coat the entire outside of the cake with the apricot jam.
Dust the rolling pin and the work surface repeatedly with a little powdered sugar, otherwise the fondant will stick just like normal dough. I used a normal rolling pin, but there are special fondant rollers.
First, roll out the white fondant and place it over the cake. You can use a rolling pin to help with this; simply roll a part of the fondant onto the rolling pin and then unroll it onto the cake.
Now color a portion of the fondant pink and roll it out thinly. My friend made a template of a tiara out of parchment paper and used it to cut out the fondant with a knife. Use a food coloring pen to draw decorations on the front according to your taste and attach the gemstone. To get the nice round shape, simply wrap a piece of parchment paper around a tin can and wrap the tiara around it. Let it harden a little in the air. Apply a little water to the edge and distribute sugar pearls or sugar sprinkles as desired. From the rolled-out fondant, also cut out pink flowers and the child's name or age. Decorate the flowers with a pink food coloring pen and place a sugar pearl in the center of each. The flowers can be attached to the cake again with a little water.
As further decoration, place an edible wafer butterfly on the cake. We only placed the tiara on the cake shortly before serving. Now the princess party can begin!
