The current hit with little girls is the Ice Queen, or Frozen. Elsa in particular has captured the children's hearts. So it is not surprising that we tried our hand at a Frozen/Ice Queen themed cake. Here is our guide for a unique Frozen birthday cake.
Recipe for a rainbow cake for an Ice Queen/Frozen cake
Ingredients for the batter:
- 6 eggs
- 250 g sugar
- 1 packet vanilla sugar
- 350 ml oil
- 175 ml lukewarm water
- 290 g flour
- 1 pinch of baking soda
- 1 packet baking powder
- 1 food coloring in blue (I used the gel colors from allestorte.at: Gel color set)
- Fondant tool
(I bought mine on Amazon)
- Snowflake cutter
(I also bought these cutters on Amazon)
- 1 baking pan 26 cm
- Ice Queen figures
: Elsa, Anna, and Olaf

Ingredients for the ganache:
- 500 g milk chocolate
- 200 g heavy cream
Decoration:
- 500 g white fondant
- 150 g light blue fondant
Instructions:
Preheat the oven to 180°C (356°F) top and bottom heat. Whisk the eggs, sugar, and vanilla sugar until frothy for about 3 minutes. Add water and oil and continue to stir. Mix flour with baking powder and baking soda and add to the egg mixture. Now divide the batter evenly into 3 bowls and color with the blue food coloring. One bowl should get a lot of blue color, one very little, and one exactly a medium amount, so that dark, medium, and light blue are created.
Now it's time to bake. There are 2 options here. Either fill the colored batter into a springform pan each time or use stencils with parchment paper:
Springform pan:
Line a 26 cm springform pan with parchment paper and pour in one colored batter. Bake in the oven at 180°C for about 10 minutes. Repeat the whole process 2 more times. Let the cake layers cool down well.
Stencils:
On parchment paper, use a permanent marker to draw a circle the size of the inner ring mold. Turn the parchment paper over so you don't have marker on the cake and place it on a baking sheet. Now quickly spread the batter on it. Don't wait too long, otherwise the batter will run apart too much, and slide it immediately into the oven. Let the cake layers cool. Place the springform pan on the cake layers and cut out the exact contours with a knife.
If you have a convection oven, you can bake 2-3 cake layers together. However, there shouldn't be more than 3, as they won't turn out as well otherwise. Bake all 3 colored batters and let them cool.
I did it with the springform pan and without parchment paper so that the edge would be nicer. That worked wonderfully with this batter. I carefully loosened the finished cake layer with a knife and turned it out onto parchment paper. In the oven, I only ever had one cake layer and did not use convection.
In the meantime, I prepared the ganache. This is used to coat the cake under the fondant and also between the cake layers. You can use white, milk, or dark chocolate here. I decided on a milk chocolate ganache.
To do this, chop the milk chocolate and put it in a pot. Heat the heavy cream a little – important: it must not boil. Now pour the heavy cream over the chocolate (not the other way around!) and melt it on the stove at medium temperature. Stir again and again with a whisk.
It is important to stir calmly and little so that hardly any air can get into the mass. The consistency should be a creamy mass, similar to Nutella. Let the finished ganache rest for at least 5 hours in a cool place (but not cold!). It is good to make the ganache at noon if you want to coat the cake with it in the evening.
Now the cake is assembled: place the first cake layer, depending on the desired color (my order: first dark blue, then medium blue, and light blue on top), on a serving plate. For me, it was the dark blue cake and I coated it with a little cream. To create such beautiful stairs for Elsa and Anna, offset the cake layers a little towards the back. Now place the medium blue cake layer on the dark blue one and also coat it with a little chocolate ganache. Repeat the whole thing with the last light blue cake layer: place it slightly offset on the medium blue one. Now coat the entire cake on the top and outside with the chocolate ganache.
Here I can highly recommend a small dough spatula. This can really create a beautiful, smooth surface. Just be careful at the back, as the cake layers hang a little towards the back. If you want, you can also cut the cake straight here to have a nicer edge. However, this is not necessary due to the fondant, as you can wonderfully conceal these unevennesses with it. Place the cake in the fridge to cool in the meantime.
Now comes my favorite part: decorating to your heart's content. We first rolled out the light blue fondant thinly and laid it over the stairs. On the top and sides, we placed a very large piece of rolled-out white fondant. We colored part of the white fondant with the blue food coloring: but don't knead it too well so that this marbling for the ice rocks can be created.
To do this, roll out the marbled fondant thinly and cut out the jagged edges with a knife or a fondant tool. We also marbled the light blue fondant by kneading a little white into it. We cut the '6' out of this. Let the rocks and the number harden a little in the air so that they hold better. Finally, cut out the snowflakes from blue and white fondant. Now everything is distributed on the cake. We supported the rocks at the back with a toothpick. We stuck a toothpick into the 6 and used it to stick it into the cake. For Anna, we made a small pedestal using white fondant so that she could stand better (and not have her feet stuck in the chocolate ganache!). We also made a small fondant pedestal on the side for Olaf. Now just place the stars on the cake to your heart's content and the Ice Queen party can begin.
Conclusion
This cake is a bit more elaborate due to the baking of the 3 different cake layers. Personally, I don't think it's that bad and it looks really great when you cut it. You can wonderfully decorate and cover the cake with the fondant. You should leave yourself enough free time to be able to prepare and decorate the cake. It is best to store the cake in the fridge until the party and only put the figures, the rocks, and the number on the cake shortly before serving.
My mishap with a Frozen cake
Perhaps some of you have already wondered about the photos, the cake has 'steps'. And funnily enough, that wasn't planned at all. I assembled the cake late in the evening and coated it with ganache. After that, the whole thing goes into the fridge. But I was 'unfortunately' too lazy to take out all the bottles and just put my cake on top of these bottles. The next morning I couldn't believe my eyes, the cake layers had slipped. I was so done, because I wanted to give the cake to a friend for her birthday. Since there was no time left, I just continued and covered the cake with fondant and brought it to the big celebration that same day. I was so crushed. Until the mother-in-law of my friend – a gifted cook and baking queen – came. She looks at the cake closely and comes to me with: "Great, how on earth did you manage to get these great steps?". With that, the party was saved and I was even a little proud.
