Recipe of the month – Apple Spätzle

Ingredients for 1 serving:

  • 60 g flour
  • 1 small egg
  • 1 pinch of salt
  • A little water
  • 1 tbsp sugar
  • 1 tsp butter
  • 1 large apple

Total amount of spread: 400 g Apple Spätzle

Preparation:

Mix the egg, flour, salt, and water into a smooth, thick batter. First, add only 1–2 tbsp of water, then gradually add more water until the desired consistency is reached. Let the batter rest for a few minutes, and in the meantime, prepare the apple and cut it into thin slices. Heat sugar in a hot pan and sauté the apple slices in it, adding a little butter. Reduce the heat and let them steam until soft for about 5 minutes.

Drip the batter into lightly boiling salted water using a Spätzle maker.

The batter has the ideal consistency if it does not drip through the holes without moving the maker. When the Spätzle rise to the surface of the water, strain them and add them to the sautéed apple slices, mix, and serve immediately.
