Recipe of the month: Grain salad with asparagus

Ingredients for 1 serving:

  • 100 g grain (e.g., Pedon – is a product range at Merkur; there are various grain-legume mixtures available that are ready to eat in 10 minutes cooking time.)
  • 200 g white asparagus
  • 2-3 cherry tomatoes
  • Plenty of fresh parsley
  • 1 tbsp oil
  • Vinegar
  • Salt, pepper
  • Chicory
  • A little sugar
  • 1 tsp oil
  • 1 tsp salt

Preparation:

Cook the grain mixture in sufficient salted water for approx. 10 minutes until soft and drain. In the meantime, prepare the asparagus. Season a large pot of water with salt, sugar, and 1 tsp of oil, and bring the water to a boil. Peel the asparagus. Remove the woody ends. White asparagus is peeled starting directly from the head.

As soon as the water is boiling, add the asparagus and let the water come to a boil briefly once. Then immediately reduce the heat. Asparagus should never boil vigorously so that the delicate asparagus heads are not damaged. Depending on the thickness of the asparagus stalks, let it steep for approx. 10 minutes. Quarter the cherry tomatoes, cut the asparagus into bite-sized pieces, and coarsely chop or just pluck the parsley. Mix well with the cooled grain, vinegar, and oil, and season to taste with salt and pepper.

We eat with our eyes: Serve on chicory leaves!
