The classic blancmange is prepared from milk with flavoring ingredients. The milk is boiled, thickened with a binding agent, and traditionally served with berries or fruit puree.
Recipe for a blancmange with strawberries
Ingredients
- 500 ml milk
- 2 tbsp sugar
- 40 g cornstarch
- 1 vanilla bean
- 1 egg
- Strawberries

- Vanilla blancmange is very popular. For this, the cornstarch is stirred cold into half a cup of milk and mixed with the sugar. The remaining milk is brought to a boil in a pot with the vanilla bean. The vanilla bean should be slit open beforehand with a sharp knife to get to the good vanilla seeds. The vanilla seeds are scraped out with the back of a knife and added to the milk in the pot. The pod is also added to the pot as a flavor carrier and boiled along with it.
- Now remove the bubbling milk from the stove, quickly stir the starch-sugar mixture into the boiling hot milk, and let the blancmange boil up briefly once more.
- Then skillfully separate the egg and thicken the blancmange with the egg yolk, without letting the milk boil again. The egg should not curdle, but rather be stirred vigorously into the blancmange so that the vanilla blancmange gets its typical yellow color.
- The egg white is beaten until very stiff, refined with a little sugar, and folded into the still-hot blancmange mixture. Pour the blancmange into a bowl and let it cool.
If you want to unmold the blancmange later, you should put it into a heat-resistant mold that has been rinsed with cold water beforehand and chill it for at least 3-4 hours. Serve with strawberries.
Tip: a vanilla sauce can also be made this way – simply reduce the amount of starch by half for this. Other variations are of course also possible.
Variation: By melting 100g of chocolate in the boiling milk or stirring in 40g of cocoa, a delicious chocolate blancmange is created. Many other possibilities can also be implemented with caramel, fruit layers, or cinnamon.
