Summer time is ice cream time – hardly anyone, especially children, can resist the cool treat. However, store-bought ice cream contains not only an incredible amount of calories, but also masses of additives, which a layperson often finds difficult to keep track of. Especially for Allergy sufferers or people suffering from lactose intolerance, supermarket ice cream is a no-go. An ice cream maker is really a good investment here for allergy sufferers and people who like to experiment. However, those who do not want to purchase another kitchen appliance can also conjure up delicious ice cream without a machine.

Make your own ice cream

Ingredients:

  • 500 g fruit of your choice
  • 100 g powdered sugar or vanilla sugar
  • 100 ml milk
  • 100 ml cream
  • 2-3 egg yolks or alternatively 1 packet of cream stiffener
  • possibly 3 tbsp mascarpone
  • orange juice as needed

  1. Depending on your mood, you can make milk ice cream or sorbets. There are no limits here, and you can also use things that you might have missed in other types of ice cream before.
  2. The fruits are washed, pitted or otherwise prepared, pureed and mixed with powdered sugar, egg yolk, milk and cream. If you want to avoid eggs, use cream stiffener instead or use locust bean gum as a binding agent.

Important when using an ice cream maker: the cooling. For machines with batteries, the necessary parts must be well chilled (usually 24 hours in the freezer); for devices with cooling units, this is not necessary. The cooling takes place via the power supply – with the latter ice cream makers, however, the high price is quite obviously noticeable. The ice cream mixture must be pre-cooled in the refrigerator for approximately 4 hours before real ice cream can be made from it. Now the ice cream maker is prepared, turned on, and the ice cream mixture is slowly added through the opening. After approximately 20-30 minutes the ice cream is ready. If it has not yet reached the desired consistency, it can be put in the freezer for another half hour.

Variant 2 – Making ice cream without an ice cream maker

  1. For a fruit ice cream, prepare the desired frozen fruits and mix well with the mascarpone, vanilla sugar, powdered sugar, and orange juice. The instant summer ice cream is ready.
  2. For many recipes without an ice cream maker, it is necessary to stir the ice cream mixture during the freezing process. As a rule, once an hour such a turn is necessary so that no ice crystals form and even cooling is ensured.
