A confetti cake is perfect for Carnival. Here, I tried out a recipe with Fanta. Yes, you read that right, with the drink Fanta. I was skeptical at first, but everyone liked it very much, and the children, of course, loved the many sprinkles. Why not try it out yourself:
Confetti cake
Ingredients:
- 400g wheat flour
- 200g sugar
- 5 medium-sized eggs
- 150 ml sunflower oil
- 180 ml orange soda
- 1 packet baking powder
- Icing or frosting
- Sugar sprinkles for decorating and optionally for the batter
Instructions:
Preheat the oven to 175 degrees Celsius (top and bottom heat). Line a baking tray with parchment paper. Beat the eggs with the sugar for a few minutes until light and fluffy.
Mix the flour and baking powder. Stir in alternately with the oil. Finally, stir in the soda only briefly so that the carbonation does not escape. Optionally, fold in sugar sprinkles or confetti. Spread the batter on the baking tray. Bake the cake for approx. 20-25 minutes.
Let the cake cool down, and decorate as desired with icing, frosting, and colorful sugar confetti.
Tip: Spread with icing, pudding buttercream, or pudding mascarpone cream.
We decided on a mascarpone cream:
Pudding Mascarpone Cream
- 1 packet vanilla pudding
- 50 g sugar
- 400 ml milk
- 125g mascarpone
Mix the pudding powder with sugar and 6 tablespoons of the milk. Bring the remaining milk to a boil. Remove from heat and stir in the mixed powder with a whisk. Return to the stove and cook while stirring until it becomes a pudding. Stir in the mascarpone and let it cool down slightly.
We put the cream into the cake. To do this, cut the cake horizontally once with a knife and place the top half on a board. Spread half of the cream on the bottom part of the cake and place the top half back on the cake. Now cover the whole cake with the remaining cream and finally add sprinkles on top.
