
Apricot compote, or 'Marillenröster' as it is known in Austria, is a fruity dessert variation often served with other sweet dishes such as a Kaiserschmarrn. Here we have a recipe for making your own apricot compote:
Making your own apricot compote
Ingredients for 2 jars of 500 ml each:
- 2 kg apricots
- 150 g sugar
- 100 ml water
- 1 lemon
- 1 cinnamon stick
- 2 cloves
- optional: ginger
- optional: apricot brandy or rum
Instructions:
Wash the apricots, halve them, and remove the pits. Wash the lemon and cut it into slices. Bring the apricots to a boil with the lemon slices, spices, and water, stirring until the fruit is slightly wrinkled. Now add the sugar and cook until it has completely dissolved. Season to taste with a little apricot brandy or rum.
Fill the apricot compote into the prepared jars, seal them well, and process in the canning pot at 75 °C for approx. 20 minutes or at 180 °C in the oven.
