In summer, something refreshing is always welcome. For coffee in the afternoon or for an occasion, yogurt slices are recommended. With a thin sponge cake, fresh fruit and a cool yogurt mixture, it is just the right thing for a beautiful summer afternoon with dear friends and family. Give it a try:
Recipe for yogurt slices with fruit
Ingredients for sponge cake:
- 6 eggs
- 1 packet vanilla sugar
- 150 g powdered sugar
- 180 g flour
- a little butter for the baking tray
- a little more flour for the baking tray
Ingredients for yogurt mixture:
- 750 g yogurt
- 8 tbsp powdered sugar
- 1 packet vanilla sugar
- 12 sheets of gelatin
- 250 g heavy cream
- a little rum (or juice or syrup if children are eating)
- fruit (canned peaches, canned mandarins, blueberries, bananas, raspberries, strawberries, etc.)
Instructions:
Preheat the oven to 170° C top and bottom heat. In a bowl, whisk the eggs, powdered sugar and vanilla sugar until very frothy. Finally, mix in the flour and stir very well. Grease the baking tray with a little butter and dust with a little flour. Spread the mixture well on the tray. Bake in the oven at 170° C for 15 minutes. Let it cool down well.
In the meantime, soak the 12 sheets of gelatin in cold water for 5 minutes. Whip the heavy cream until stiff. Mix the yogurt well with the powdered sugar and vanilla sugar. Put a little rum or juice in a pot (I use, for example, the juice from the canned peaches), pour it in and quickly stir in the softened gelatin and remove it from the stove immediately. Let it cool down until it reaches room temperature and stir it into the yogurt. Never add the gelatin to the yogurt when it is too hot, as this will form rubbery lumps. Now add the stiff whipped cream.
Now distribute the fruit on the cake; we used canned peaches. Spread the yogurt-whipped cream mixture over the fruit and chill in the refrigerator for at least 2 hours.
