Lightweight rust-resistant knives made of chrome vanadium steel. Almost identical to the Original Series, only with light-brown handles.
IZ- Series
White Yasuki high-carbon steel blades supported by soft carbon steel. Handmade and hand-forged in Sakai by renowned Sakai knife smiths. Can be sharpened to an extreme sharpness and holds its edge for a long time. Round magnolia wood handles with buffalo horn bolster. The color of the handle and bolsters can vary from knife to knife. Not dishwasher-safe. Blade hardness 60–61 Rockwell C.
All MAC knives need the right care. This includes regular sharpening with the appropriate whetstone. Because cutting is only enjoyable with sharp knives.
