Welfen Pudding – Festive Pudding

Welfenspeise - Pudding

For holidays, people like to serve something special and festive. For as long as I can remember, we have had Welfenpudding, also known as Welfenspeise, at my mom's house. It is a homemade vanilla pudding with a wine foam cream. For me, that is always Christmas at home. I would like to continue this tradition in my own family and had Mom write down the recipe for me.

Recipe for a festive Welfenpudding

Ingredients:

  • 1/2 L milk
  • 4 tbsp sugar
  • 1 packet vanilla sugar
  • 1 pinch of salt
  • 6 egg whites
  • 50 g cornstarch (5 tbsp)
  • 6 egg yolks
  • 6 tbsp sugar
  • approx. 1/4 l white wine
  • Juice and zest of 1/2 lemon
  • 1 tbsp cornstarch
  • 2 nice large bowls for serving

Instructions:

Mix 2 to 3 tablespoons of milk with the 50 g of cornstarch. Bring the remaining milk, sugar, and vanilla sugar to a boil, stir in the cornstarch, and bring to a boil again. Beat the egg whites until stiff and fold them into the milk mixture. Divide this egg white mixture into 2 large bowls.

The egg yolks must be heated in a water bath; to do this, place 2 pots on top of each other, put some water in the bottom pot and heat it. Place the egg yolks and sugar in the top pot and whisk until frothy. Add the white wine, lemon juice, lemon zest, and 1 tbsp of cornstarch. Heat everything while whisking constantly until the cream rises and thickens. Then remove the pot from the water bath and pour the hot wine foam over the vanilla pudding. Chill the whole thing well and only serve afterwards.
