Finger pressure test for sponge or sheet cakes
The best way to check if sponge or sheet cakes are done is by pressing them with your finger. If the cake gives slightly but no dent remains, it is done.
Skewer test for cakes and gateaux
For cakes or gateaux in tins, it is best to check using a wooden skewer (the kind from Japanese/Chinese restaurants) or a knitting needle. For the needle test, pierce the cake with the knitting needle and pull it out again. If no dough sticks to the needle, it is baked through. If you don't have a knitting needle to hand, you can also use a wooden skewer or, in an emergency, a raw spaghetti noodle.
