
Chia seeds have been considered a "superfood" for some time now and are being incorporated into everything. They provide a high content of fiber, protein, and omega-3 fatty acids. They promote digestion and regulate blood sugar, and are also said to alleviate heartburn and joint pain.
My daughter naturally tried out a recipe with them right away, namely chia seeds as a pudding. Here is the recipe:
Recipe: Chia Pudding with Berries
Ingredients for 1 person:
- 2 tbsp chia seeds
- 100 ml oat milk or almond drink
- maple syrup for sweetening if desired
- 1 tbsp raspberries
- 1 tbsp blueberries
- 6-8 berries for decoration
Instructions:
Heat the oat milk with the chia seeds and the berries in a pot over medium heat for about 5 minutes. Then remove from the heat and stir until everything has a jam-like consistency.
Let the chia pudding cool in the refrigerator for at least 30 minutes; it is even better to let it sit overnight.
The next day, decorate with fresh berries and enjoy.
