Leftovers: rice with vegetables and teriyaki sauce

Anyone who cooks often knows this all too well: there is always something left over here and there. What to do with the leftovers? I always dutifully store them in Tupperware containers, yes, and then? Here I have an idea for what fine things you can conjure up with leftovers such as rice and vegetables:

Leftovers: rice with vegetables and teriyaki sauce

Ingredients:

  • 1 cup rice
  • 1 tbsp oil (sunflower oil or, if you like, sesame oil)
  • Vegetables of your choice, either fresh or frozen
  • 3-4 tbsp teriyaki sauce
  • 1 egg
  • Parsley
  • Chives
  • Salt
  • Pepper

Instructions:

If you don't have any leftover rice, cook it according to the package instructions.

Extra info: I always cook the rice in the Reismeister from Tupper: to do this, put 1 cup of rice and 1.5 cups of water into the Reismeister and cook in the microwave for about 12-13 minutes until done. Let it stand for 5 minutes and only then season. It's so super easy that my children have been able to cook it themselves for a long time.

Now fry the rice and vegetables with the oil in a pan. Crack the egg and add it directly to the pan, stirring well. Add the teriyaki sauce to taste. Season with salt and pepper and garnish with the herbs.

Extra info: if you use frozen vegetables, prepare them additionally according to the package instructions.
