Testing high-quality kitchen knives and cutting boards – experience report

Anyone who has ever worked in a kitchen knows how important the right equipment is. Especially with knives and kitchen boards, you should pay close attention to good quality, because nothing is more tedious than knives that don't cut and boards on which you cannot cut well. I always enjoy watching professional chefs on TV, and they always have very high-quality knives; many have Japanese knives. The wooden boards are also always very solid. One of my favorite chefs is Jamie Oliver, and he always has such a great, large wooden board where he has chopped everything up.

The more I cooked and baked in the kitchen, the more I understood it. I have been provided with a noble set of Kitchen knives, a practical magnetic knife block and a solid cutting board from Knives and Tools free of charge, tested them, and would like to share my experiences with you here.

A Nakiri is a traditional Japanese vegetable knife that can be easily recognized by its rectangular blade. The tip is slightly rounded and helps to cut vegetables really quickly. With this Eden Sugoi Nagiri you can effortlessly cut vegetables like carrots, cabbage, cucumbers, etc., very finely. Herbs can also be finely chopped easily and quickly with this knife. The blade is 17.5 cm long and the blade height is 4.9 cm.

Extra info: do not be misled, this knife is not only for Japanese dishes, but is very good for vegetables and herbs. Since we use a lot of vegetables and herbs in the kitchen, this knife is ideal for me.

The Eden Sugoi Chef's Knife is a very versatile knife; you can use it to cut fruit and vegetables, as well as fish and meat. Furthermore, you can peel garlic, crush peppercorns, and chop herbs. The blade is 20 cm long and large enough for everyday cutting tasks.

A handy, small knife is the Eden Sugoi Paring Knife, with which small cutting and light peeling tasks can be carried out. The blade is 11 cm long and weighs only 78 g.

All 3 knives have a beautiful grain on the blades, a printed Damascus pattern, which is not just beautiful to look at. The blades of the knives are made of VG10 steel with a hardness of 58 to 60 HRC, stainless steel, and a relatively high carbon content. This means that this steel is significantly harder than most stainless steel knives. But that's not all; the blade is also sharper than European knives and it also stays sharp longer. VG-10 steel is also known for being easier and faster to sharpen.

Another important detail about the knives: they have no bolster. This means that you can use the entire blade when cutting with these knives and also sharpen the knives more easily.

The knives fit very well in the hand; the handle is made of noble olive wood and, in my opinion, looks very elegant.

Extra info: Very important: Do not put knives in the dishwasher. The blade can rust due to washing, and the handle can suffer from heat and moisture. It is best to wash the knife by hand immediately after use and dry it immediately. The beautiful olive wood handle remains in optimal condition if you oil it from time to time with mineral oil.

A magnetic knife block from Knives and Tools

You read again and again that knives should not simply be stored in a drawer. Japanese knives in particular react very sensitively to such storage. Due to the movements of the drawer, the blades hit each other and damage each other. Furthermore, it is not entirely safe to reach into it when the knives are sharp. In addition, it is always very practical when cooking to have your knives within reach and not have to rummage around awkwardly in a drawer.

My knife block is in a noble light brown and made of acacia wood with a stainless steel base. It is very solid and weighs around 1,650 g, so it cannot be knocked over easily. Practical and large cutting board from Knives and Tools

The Eden Quality Cutting Board is perfect for chefs and super practical. Since it has no feet or edges, it can be used on both sides. With the handle, it can be easily lifted and moved to wherever you need it. The cutting board has an ideal size with a length of 44 cm and a width of 28 cm. It is 4 cm high. The board can also be used as a chopping block.

This board is made of high-quality rubberwood; this type of wood has properties comparable to conventional hardwood, only it is much better for the environment. This wood is one of the 'friendliest' woods in today's timber industry because it is only used when the entire latex production cycle is completed. It is also one of the most stable types of wood and always retains its shape even under changing conditions. It is also great that this wood has a natural antibacterial effect.

It is very important to take good care of the board. Therefore, it is advisable to oil the board before the first use and to repeat this in the first 6 months.

Extra info: For this, use an oil that has neither smell nor taste, such as grape seed oil, white mineral oil, or a special cutting board oil. Just do not use olive oil, as it is too sticky. Also, do not use almond oil if someone has a nut allergy.

Cleaning is very simple: just rinse the board under running water and dry it with a cloth. If necessary, you can use a little dish soap as well. Then let the board dry standing up.

Caution: Do not put the board in the dishwasher and do not leave it in water for too long.

My conclusion on the knife set, magnetic knife block, and cutting board from Knives and Tools

I am very impressed with these 3 products. The solid cutting board offers ideal space for cutting, does not wobble, and can be easily turned with the handle. The knives fit very well in the hand and make cutting immensely easier; even hard vegetables, such as carrots, are quickly chopped up with them. From my experience here, definitely invest in good quality like that from Knives and Tools, as it really pays off in the long run.

Especially the magnetic knife block has won me over, I confess. It is so simple and practical. You have the knife in your hand immediately, don't have to rummage around and search, and can also easily stow it away again after cooking. In addition, it looks totally elegant when the great knives are attached to it. Since everyone always hangs out in the kitchen at parties anyway, this knife block will certainly attract a lot of attention. I can highly recommend these products; you will have joy in the kitchen with these great little helpers.

Update June 2024: the knives are still top-notch and in constant use. I have also used the cutting board more often and it is still beautiful. I can really highly recommend this set.
