
This pasta salad was a tradition for us at Christmas. We always ate this every 3 days in the evening and really loved it. I tried to recreate the recipe here, but unfortunately I can't get it exactly the same, but it still tastes very, very good and reminds us of our mom:
Recipe for pasta salad à la Mama
Ingredients:
- 500 g spaghetti
- Pinch of salt
- 2 tomatoes
- 5-6 pickles
- 100 g bologna sausage (Extrawurst)
- 4 hard-boiled eggs
- 180 g can of mushrooms
Ingredients for the mayonnaise:
- 1-2 egg yolks
- 1 tsp mustard
- 1 pinch of salt
- 1 pinch of pepper
- 1 pinch paprika powder
- 1 pinch of curry powder
- 1 tsp ketchup
- 1 tsp mustard
- 1 tsp tomato paste
- 1 splash of pickle juice
- 2 tbsp neutral oil
Instructions:
Break the noodles into bite-sized pieces and cook in boiling salted water according to the instructions until al dente. Drain and let cool. Hard-boil the 4 eggs for 6-7 minutes, rinse with cold water, and peel.
Chop the tomatoes, mushrooms, pickles, bologna sausage, and 3 eggs. Slice the 4th egg using an egg slicer.
For the mayonnaise, stir the egg yolks and spices until smooth, then very slowly pour in the oil, only adding as much as it can absorb well. Finally, add the pickle juice and stir well.
Now pour the dressing over the cold noodles and mix well, garnish with the egg slices.
