When it comes to fondue, the sauces are the be-all and end-all. Recently, I thought about just quickly buying a few sauces, but it's just not the same, and especially with this recipe, you're done really quickly. Here you have a basic recipe, and you just add a few ingredients to it; you have to try it, they taste really great:

Basic recipe for a sauce for raclette or fondue
Ingredients:
- 125 g yogurt
- 125 g sour cream
- 2 tbsp mayonnaise
Instructions:
These ingredients are a base for the sauces, and here are the variations that you can mix into them:
Mustard-garlic sauce
Ingredients:
- 1 garlic clove, finely pressed
- approx. 2 to 3 tbsp tarragon mustard
- 1 dash of soy sauce
- Salt
- Pepper
Instructions:
Mix all ingredients into the basic recipe according to taste.
Herb sauce
Ingredients:
- 2 tbsp of various herbs (e.g., chives, parsley, dill, etc.) or use a frozen herb mixture
- 1 tbsp mustard
- 2 garlic cloves, pressed
- Salt
- Pepper
Instructions:
Mix all ingredients into the basic recipe according to taste.
Garlic sauce
Ingredients:
- 5 garlic cloves, pressed
- 1 tbsp mustard
- Salt
- Pepper
Instructions:
Mix all ingredients into the basic recipe according to taste.
American sauce
- 1 tbsp ketchup
- 1 tbsp tarragon mustard
- 1 garlic clove, pressed
- 1 tbsp horseradish
- 1 dash of soy sauce
- Salt
- Pepper
Instructions:
Mix all ingredients into the basic recipe according to taste.
Horseradish sauce
- 125 g crème fraîche
- 1 garlic clove, pressed
- 100 g tube of prepared horseradish
Instructions:
Mix all ingredients into the basic recipe according to taste.
Gorgonzola sauce
Ingredients:
- 100 g Gorgonzola
- Pepper
- Salt
Instructions:
Mash the Gorgonzola with a fork and mix it with all the ingredients and the basic recipe according to taste.
Egg sauce
Ingredients:
- 4 hard-boiled eggs
- 1 pinch of curry powder
- 4 gherkins, finely chopped
- 1 tbsp tarragon mustard
- 1 tbsp chives
Instructions:
Mash the eggs with a fork or chop them finely with a knife and mix with the remaining ingredients as well as the basic recipe according to taste.
Onion mustard sauce
Ingredients:
- 1 onion, finely chopped
- 4 to 5 tbsp tarragon mustard
- 1 dash of soy sauce
- Salt
- Pepper
Instructions:
Chop the onion finely and mix with the remaining ingredients as well as the basic recipe.
Tzatziki sauce
Ingredients:
- 1 half cucumber
- 4 garlic cloves, pressed
- Salt
- Pepper
- Oregano
Instructions:
Cut the cucumber into julienne (i.e., into very fine pieces), press the garlic cloves with a garlic press, and mix well with all the remaining ingredients as well as the basic recipe.
Extra tip: if you want to do it the authentic way, use only 250 g of Greek yogurt instead of yogurt & sour cream.
Cranberry sauce
Only for this sauce do you not need a basic recipe with sour cream and yogurt; it is without, and you absolutely have to try it, it tastes really very good.
Ingredients:
- 125 g heavy cream, whipped until stiff
- 100 g cranberries, fresh in a jar or frozen
- 1 tbsp horseradish (e.g., prepared horseradish for cream)
- 1 tbsp sweet mustard
Instructions:
Whip the heavy cream until stiff, mix the cranberries (I used a jar) with the horseradish (I used the prepared horseradish for cream) and the sweet mustard according to taste. It tastes really good. The mixture of sweet and spicy works very well.
