Salad with sweet potatoes

My daughter discovered this salad on a social media platform and tried it out right away. This colorful salad is impressive not only because of its great color, but also because of the many different flavors that are combined here. You absolutely have to try it too:

Sweet potato salad

Ingredients:

  • 2 large sweet potatoes
  • 3 tbsp olive oil
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 handful of lettuce (lamb's lettuce, arugula, butterhead lettuce or salad mixes, etc.)
  • approx. 75 g feta
  • 1 avocado
  • 1/2 red onion, chopped
  • pumpkin seeds
  • walnuts, chopped
  • dried cranberries

Ingredients for the dressing:

  • 1 tbsp honey
  • 1 tbsp mustard
  • 2 tbsp lemon juice
  • 5 tbsp olive oil
  • Salt
  • Pepper

Instructions:

Preheat the oven to 180°C (356°F) with top and bottom heat.

Peel the sweet potatoes, cut them into bite-sized pieces and spread them on a baking sheet lined with parchment paper. Season the sweet potatoes with salt and pepper and drizzle with olive oil. Bake the sweet potatoes in the oven for approx. 20 to 25 minutes at 180°C (356°F) top and bottom heat; the sweet potatoes should be nice and crispy.

In the meantime, prepare the dressing. To do this, mix the honey, mustard, and lemon juice. Then add the olive oil and stir until it is a homogeneous sauce.

Extra tip:put all the ingredients for the dressing into a screw-top jar and shake vigorously. It's very quick.

Remove the pit from the avocado and cut it into bite-sized pieces. Peel the onion and also chop it finely, chop the walnuts finely.

Now arrange the salad: take a plate and spread the green salad on it. Distribute the avocado, onion, cranberries, walnuts, and pumpkin seeds over the salad. Simply crumble the feta over the salad by hand. Finally, pour the dressing over it.
