High-protein meal – Tuna rice salad

High-protein meals are currently on everyone's lips, so I also went on the hunt for recipes with lots of protein. This salad caught my eye. Simple ingredients, quick to prepare and, of course, lots of protein. The salad contains approximately 14 g of protein.

Recipe for a high-protein tuna rice salad

Ingredients for 4 people:

  • 8 tbsp mayonnaise
  • 7 tbsp pickle juice
  • Salt
  • Pepper

Salad ingredients for 4 people:

  • 200 g rice (uncooked)
  • 2 red bell peppers
  • 8 gherkins
  • 1 onion
  • 1 can corn
  • 2 cans of tuna, 185 g each
  • 3 tbsp parsley, chopped

Instructions:

First, cook the rice until soft according to the package instructions and let it cool down a little.

Mix the dressing in a bowl by stirring the mayonnaise and pickle juice well and seasoning with salt and pepper. Peel and finely chop the onion. Also chop the bell pepper and the gherkins. Add the vegetables (corn, onion, gherkins, bell pepper) to the bowl with the dressing and mix well. Add the tuna and mix well again. Now add the cooked rice to the vegetable-fish mixture and mix everything very well. Sprinkle with parsley and serve immediately.

Extra tip:I cook the rice with the Tupper Rice Maker, the rice always turns out perfectly for me; to make it even faster, chop the vegetables with a vegetable chopper.

Extra info:Of course, you can swap the vegetables as you like, just keep the tuna for the protein.
