This chicken and broccoli casserole with melted cheese is quick and easy to make. The casserole is low-carb, high-protein, and packed with protein.
Recipe for a high-protein chicken and broccoli casserole
Ingredients for 4 people:
- 400 g chicken breast fillet
- 1 onion
- 2 cloves of garlic
- 1 broccoli, or approx. 600 g frozen broccoli
- 2 tbsp rapeseed oil
- 100 ml chicken or vegetable broth
- 200 g cream cheese (plain or with herbs)
- Salt
- Pepper
- 100 g grated cheese
Instructions:
Preheat the oven to 180° C with top and bottom heat.
Dice the chicken meat into small pieces, finely chop the onion and garlic. Let the broccoli thaw, or if it is fresh, cut it into small pieces.
Bring a pot of water with a little salt to a boil and cook the broccoli until al dente, which takes about 2 minutes. Drain the water and rinse with cold water.
Heat the oil in a pan and sear the chicken meat well on all sides. Now add the garlic and onion and fry for another 3 minutes. Add the chicken broth and cream cheese and bring everything to a boil once. Season the sauce with salt and pepper.
Take a casserole dish and add both the chicken with sauce and the broccoli, mix everything briefly, and sprinkle with the cheese.
Bake in the oven at 180°C (356°F) with top and bottom heat for approx. 20 minutes. The cheese should be crispy and slightly browned.
