This recipe not only tastes very good, it also looks wonderful. It is ideal for a finger food buffet, contains lots of protein, and is low carb. Above all, you can prepare this roll wonderfully and then keep it in the fridge until the big moment. You absolutely have to try it, we really enjoyed it.
Recipe for a high-protein low-carb roll with salmon, spinach, and cheese
Ingredients for 2 people:
- 125 g leaf spinach (frozen or fresh)
- 4 eggs
- Salt
- Pepper
- 50 g grated cheese
- 1 tbsp grated Parmesan
- 100 g cream cheese (plain or with herbs), or Greek yogurt, or Skyr
- 200 g smoked salmon
- a little lemon juice
Instructions:
Preheat the oven to 200°C (392°F) top and bottom heat. If using frozen spinach, let it thaw and keep squeezing out and pouring off the water.
Whisk the 4 eggs well in a small bowl with a fork. Add the grated cheese and the spinach, season with salt and pepper, and mix everything well.
Line a baking tray with parchment paper and sprinkle the grated Parmesan over it.

Now spread the spinach-cheese-egg mixture over the Parmesan, spreading it well so that it becomes a uniform mass. Place the whole thing in the oven at 200°C (392°F) top and bottom heat and bake for approx. 10 minutes.

The baked egg mixture should be a uniform dough and firm. Let it cool down a little and turn it over.

Spread the baked mixture with some cream cheese or, in my case, Skyr yogurt, top with salmon slices, and drizzle with a little lemon juice. Now roll the whole thing up from the side into a roll, wrap it in cling film, and let it cool in the fridge for approx. 1 hour.
After cooling, cut the roll into bite-sized pieces with a sharp knife and arrange nicely on a plate.
