I really like these summer rolls. There are different tastes here, some like them, some don't. I've ordered these many times in a restaurant, and now the time had come for my daughter and me to recreate this delicacy ourselves. It worked great and we really enjoyed it. Here is our recipe:

Recipes for a summer roll with vegetables

Ingredients:
- Rice paper
- thin rice noodles
- Carrots
- Cucumbers
- Salad
Instructions:
First, cook the rice noodles until soft according to the package instructions. Then, let the rice noodles drain well in a colander. In the meantime, cut the vegetables into strips and set aside. Cook the shrimp in a pan until done and let them cool down.
Fill a large, flat bowl with warm water and dip the rice paper in for a few seconds until it is a bit softer.
Caution: do not dip for too long, otherwise it will be too soft and it will tear.
Place the rice paper on a large board and top with the desired ingredients. Then roll up the rice paper like a crepe and fold in one end a little so that everything doesn't fall out right away.
Extra tip: You can add many different ingredients to your personal summer roll, here are a few more examples:
- Tofu
- Peppers
- Mint
- Red Cabbage
- Coriander
- Spring onion
- Sushi rice
- Spinach
- Shrimp
- Chicken
- Peanuts
Serve the summer rolls with a sauce, either a simple soy sauce or other tasty sauces; for example, I find this quick peanut sauce very good.
Peanut sauce – peanut dip

Ingredients:
- 2 tbsp peanut butter
- 2 tbsp soy sauce
- 6 tbsp warm water
- 1 dash of lemon juice
- 1 tbsp agave syrup
- 1 tsp sesame oil
Instructions:
Stir the ingredients in a bowl until a homogeneous mixture is formed. Dip the summer rolls into this dip. It tastes really good.

Ingredients:
- Rice paper

- red bell pepper
- Avocado
- 3 shrimp

Fill a large, flat bowl with warm water and dip the rice paper in for a few seconds until it is a bit softer.
