They always say you should eat more fish instead of meat. So I make sure we eat fish at least once a week. This week I tried a salmon gratin with tomato sauce, which is going into my recipe book, it was sooooo good:
Salmon gratin with tomato sauce recipe
Ingredients:
- 4 salmon fillets
- 250 g heavy cream
- 3 cloves of garlic
- 2 tbsp tomato paste
- 1 splash of lemon juice
- 1 tbsp dill
- Salt
- Pepper
- Baking dish
Instructions:
Preheat the oven to 180° C with top and bottom heat.
Place the salmon fillets in a baking dish. Put the heavy cream and tomato paste into a tall bowl. Peel the garlic cloves, press them finely using a garlic press, and add them to the heavy cream. Whisk everything well until the tomato paste is well distributed and the sauce is slightly reddish.
Season the sauce with salt, pepper, and lemon juice, stir again, and then pour over the salmon fillets. Sprinkle the whole thing with the dill.
Bake the salmon in the oven at 180°C (356°F) top and bottom heat for approx. 20 to 30 minutes. Depending on whether the salmon is fresh or frozen. I used frozen salmon and it took a good 30 minutes for me.
Extra tip:Rice, potatoes, or just vegetables go very well with the salmon gratin.
