Recipe for a salad with shrimp, mango, and passion fruit

If you like a fruity salad, you should try this one. With mango and a passion fruit dressing, various exotic fruits are combined here. Quinoa, cucumber, and avocado, as well as shrimp, complete this culinary delight:

Recipe for a salad with shrimp, mango, and passion fruit

Ingredients for 2 people:

  • 15 shrimp
  • 1 tbsp oil for frying the shrimp
  • 50 g quinoa
  • 1 cucumber
  • 1 avocado
  • 1 mango
  • 1 onion
  • 2 handfuls of green salad (lamb's lettuce, arugula, depending on taste)
  • 50 g feta cheese
  • Salt
  • Paprika powder
  • Chili flakes
  • Mint
  • 1 passion fruit
  • 3 tbsp olive oil
  • Juice of half a lime
  • Chili flakes
  • Salt

Instructions:

Cook the quinoa according to the package instructions until soft and let it swell.

In the meantime, prepare the dressing. To do this, mix the passion fruit with the lime juice and olive oil. Season with salt and chili.

Then prepare the vegetables: cut the cucumber, onion, mango, and avocado into small pieces.

Fry the shrimp in a little olive oil and season with chili, paprika, and salt.

In a large bowl, first add the quinoa, then the vegetables, the mango, some salad, and finally the shrimp and the feta cheese. Garnish with some mint. The summery salad is ready.
