On the last day of vacation there are often half a cup of yogurt, vegetables, bread, cheese and opened packages in the refrigerator. With a short plan you can make a meal out of them instead of throwing everything away. The most important limit remains food safety: anything that has not been reliably refrigerated or appears suspicious should not be eaten out of thriftiness.
Take stock 24 hours before departure
Put all open and highly perishable foods together in plain sight. Check the use-by date, smell, appearance and refrigeration. Then divide them into three groups:
- Use first:open dairy products, sliced fruit, salad, cooked dishes.
- Take with you:unopened or easily transportable foods.
- Dispose:spoiled, left warm for too long, or leftovers that can no longer be judged safe.
Make a meal from a few ingredients
A leftovers meal doesn't need a complicated recipe. Use a basic framework:
- Vegetables plus potatoes, rice or pasta as a one?pan dish.
- Bread plus cheese and vegetables as baked toasts.
- Yogurt plus herbs as a dip for potatoes or raw vegetables.
- Ripe fruit as fruit salad or with oats.
- Cooked vegetables as soup, if all ingredients are perfectly fine.
Sensitive leftovers should be heated through completely and then eaten immediately. Foods that have already been reheated multiple times or that have an unclear history do not belong in an improvised farewell meal.
Pack only safe items for the journey home
Perishable foods only come along if a reliable cooler and enough frozen ice packs are available. The box stays closed and is not left in a heated car. Without secure cooling, shelf-stable, unopened products are the better choice.
Leave the refrigerator clean
- Remove open food items.
- Clean up spilled liquids with warm water and an appropriate cleaner.
- Wipe compartments dry.
- Dispose of waste and do not leave organic waste overnight.
- Only turn off the refrigerator if the landlord explicitly instructs you to do so.
What doesn't belong in leftover cooking
Dishes with raw egg, salads that have been unrefrigerated for a long time, bloated packages, moldy food and leftovers with an unusual smell should be discarded. Mold is not merely removed from the surface of soft foods.
