Today I felt like making a lovely autumn recipe for a snack. These apple and pumpkin seed muffins caught my eye. They taste really good and are easy to prepare. Here is the recipe:
Apple and pumpkin seed muffins

Preparation
Preheat the oven to 180° C with top and bottom heat.
If you can't get ground pumpkin seeds, finely grind them in a mini chopper.
Brush the muffin molds with a little oil.
Beat the softened butter with the sugar, vanilla sugar and salt until creamy.
Now add the 2 eggs and whisk.
Then add the remaining eggs, the flour, baking powder, pumpkin seeds and spices and mix everything well with the hand mixer.
Peel the apple, remove the core and finely grate it.
Drizzle with lemon juice.
Add the mixture to the batter and mix well.
Now fill the molds with the batter and bake in the oven for approx. 20 minutes at 180° C using top and bottom heat until done.
Leave to cool in the molds and only then remove them.
If you like, you can dust the apple and pumpkin seed muffins with powdered sugar.
