I currently really like salads with various ingredients, which is how I came across this creative salad. My husband loves Ajvar and I found the combination with pomegranate very interesting, so I tried it out right away and was rewarded; the salad really tastes very good and is quick to prepare. Why don't you give it a try too:

Variations:

  • Instead of bulgur, you can also use quinoa, couscous, or millet
  • If you don't want to sauté vegetables, you can also add fresh vegetables like cucumbers or more tomatoes to the salad, but then only add the vegetables when you are about to eat it, otherwise the salad can become watery
  • Instead of Ajvar, you can use a bell pepper paste
  • Instead of lemon juice, you can of course also use vinegar

Ingredients

Preparation

  1. Put the bulgur in a bowl and pour over the hot vegetable broth, let sit for 20-25 minutes until the bulgur has absorbed all the liquid.

  2. Cut the peppers and carrots into small pieces, either into cubes or slices.

  3. Meanwhile heat 1 tbsp oil in the pan and sauté the onion and the diced pepper for about 3 minutes.

  4. Finally add the garlic and sauté for about 1 more minute.

  5. Set everything aside.

  6. Now mix the Ajvar and tomato paste into the bulgur, then stir in the sautéed vegetables.

  7. Mix the 3 tbsp oil and lemon juice, season with salt, pepper, and paprika powder.

  8. Pour the dressing over the bulgur.

  9. Also finely chop the parsley and mix it into the salad.

  10. Garnish the salad with pomegranate seeds and sliced tomatoes.

  11. You can enjoy the salad immediately, but it tastes even better if you let it sit for a few hours.

  12. We like to eat the salad warm.
