I currently really like salads with various ingredients, which is how I came across this creative salad. My husband loves Ajvar and I found the combination with pomegranate very interesting, so I tried it out right away and was rewarded; the salad really tastes very good and is quick to prepare. Why don't you give it a try too:
Recipe for a vegan bulgur salad with ajvar and pomegranate
Variations:
- Instead of bulgur, you can also use quinoa, couscous, or millet
- If you don't want to sauté vegetables, you can also add fresh vegetables like cucumbers or more tomatoes to the salad, but then only add the vegetables when you are about to eat it, otherwise the salad can become watery
- Instead of Ajvar, you can use a bell pepper paste
- Instead of lemon juice, you can of course also use vinegar
