Are you hosting a party in the evening and have prepared some nice platters? Or would you like to decorate a cake or tart in a truly original way? Then why not try it with sweet jelly figures.

Preparation

  1. Soak the gelatin in a bowl of cold water, warm the fruit juice with the sugar slightly, and dissolve the gelatin sheets in it.

  2. Briefly dip a large, flat, rectangular metal mold into hot water (this makes the jelly easier to turn out of the mold afterwards!) and pour the mixture into it.

  3. It's best to put it in the refrigerator for a while; it will set faster.

  4. When the mixture is firm, turn it out onto the coolest possible surface, such as a chilled cake tray; this keeps the jelly nicely sliceable.

  5. Now use a knife to first cut strips and then dice them.

  6. To create imaginative jelly shapes, pour the hot liquid into pretty chocolate or confectionery molds.

  7. Let these cool in the refrigerator as well, then turn them out.

  8. For the blossom, stir up some red jelly mixture and, while still hot, pour it into molds and let it set.

  9. Color the other portion green and let it set in a larger square or rectangular mold.

  10. Then cut out stems and leaves with a knife.

  11. Or, if you have one, you can also use a cutter to punch out the leaves or flowers.

  12. Keep dipping the knife or cutter into cold water from time to time so the jelly doesn't keep sticking to it.
