Cooking for toddlers is not always easy; often children don't like the food if it's healthy, and preparation is often an ordeal because the little ones decide at that very moment that Mom or Dad must play with them. As a twin mom, I am always on the lookout for quick but healthy dishes for my little ones. Here, I have slightly modified a great recipe – in the original, it is a salad – and my children and my husband love it:

Recipe for a red, white, and green couscous

I always add the cress to the couscous dish at the table in front of my children's eyes. For my children, it's always like show cooking; they are fascinated when I cut the cress with scissors and want to have lots and lots of cress 🙂

Info:Bell peppers provide valuable vitamin C, feta cheese provides protein, couscous provides carbohydrates, and cress stimulates the stomach and organism.

Ingredients

Preparation

  1. Bring the vegetable broth to a boil and pour it over the couscous – simply let it absorb.

  2. In the meantime, cut the peppers into small pieces.

  3. Heat the oil in the pan and sauté the peppers for a few minutes over medium heat, add the couscous and the sheep's cheese, and continue to sauté until the cheese is nice and soft.

  4. Now season with salt, pepper and lemon juice and serve immediately.

Tips & Notes

I always put the cress on the couscous at the table in front of my children's eyes. For them it's like a little show — they're completely fascinated when I snip the cress with scissors and want lots and lots of cress :-)
