Apples are popular everywhere and also work very well in muffins. My daughter tried out a really great recipe for apple muffins with cinnamon streusel here. We really enjoyed them, you have to bake these. Here is the recipe:

Preparation
Preheat the oven to 180°C (356°F) fan-assisted.
Mix the flour with baking powder, baking soda, cinnamon, and nutmeg in a bowl.
Beat the egg with the brown sugar until creamy. Stir in the yogurt, oil, and vanilla.
Now add the flour mixture, mix well, and set aside.
For the streusel, put the flour, sugar, and cinnamon in a bowl and mix well.
Melt the butter in the microwave or in a pot on the stove and add it to the flour mixture. Mix with a fork or a hand mixer until streusel forms.
Core the apple and cut it into small pieces. Mix the pieces with starch and the apple pie spice. Heat briefly in a pot with a little water.
Grease the muffin tin with oil or prepare the paper liners.
First, put 2-3 tbsp of batter into the tin; they should be filled at most halfway, then add a few apple pieces and press them in slightly. Finally, distribute the streusel over the muffins.
Bake the muffins in the oven at 180°C (356°F) fan-assisted for approx. 25 minutes.
Meanwhile, prepare the topping: squeeze the juice of half a lemon and mix well with the powdered sugar in a bowl until it becomes a uniform sauce.
Pour the topping over the finished muffins.
