I baked this apple cake over the weekend. Unfortunately, I didn’t have enough butter and was looking for a recipe with an alternative. That’s when this apple cake with yogurt caught my eye, and I have to say it tastes really good, so here is the recipe:

Extra tip: Test with a wooden skewer to see whether the cake is done: insert it into the cake; if there is still batter on the skewer, continue baking; if no batter remains on the skewer, the cake is fully baked.

Ingredients

Ingredients for a 24 cm springform pan

Preparation

  1. Preheat the oven to 190° C top and bottom heat.

  2. Using a hand mixer, thoroughly whisk together the yogurt, sugar, vanilla sugar, eggs, oil, flour, and baking powder and mix into a smooth batter.

  3. Grease the 24 cm springform pan with oil and flour it.

  4. Then fill the springform pan with the batter.

  5. Peel and core the apples and cut them into large pieces; I then carefully sliced them into fans to create the beautiful pattern.

  6. Arrange the apple pieces in a circular pattern on the batter and press them in lightly.

  7. Then sprinkle the cake with the cinnamon-sugar mixture and bake in the preheated oven for about 30 to 40 minutes.

Tips & Notes

Use a wooden skewer to test whether the cake is done: stick it into the cake; if there's still batter on the skewer, bake longer; if no batter remains on the skewer, the cake is done.
