Mushroom pot with green beans

Mushrooms come in many varieties – the most famous and delicious is arguably the button mushroom. You can do a lot with this mushroom, but this tasty pot creation tastes surprisingly different.

Recipe for Mushroom Pot with Green Beans

 

This dish tastes best with Spätzle, boiled potatoes, or pasta. But a simple baguette is also excellent for the mushroom pot.

Small tip:if you are in a hurry, you can of course use the canned or jarred version instead of fresh green beans. However, you should make sure that the vegetables are well-drained before adding them to the pan.

Ingredients

Preparation

  1. The fresh champignons are removed from the packaging, thoroughly cleaned, and then halved or quartered.

  2. Bring a pot of water to a boil. Score the bottom of the tomatoes in a cross shape and place them briefly in the boiling hot water. Then remove the tomatoes from the water and rinse them with ice-cold water. Now the skin of the tomatoes can be peeled off very easily. Remove the inside and the stem of the tomato and cut only the flesh into cubes.

  3. Now heat a little oil in a sufficiently large pan and sauté the mushrooms in it. Peel and dice a large onion and add it to the mushrooms, cooking until translucent. Also, peel two cloves of garlic, cut them into fine cubes, and add them to the pan with the other vegetables.

  4. Take the green beans out of their packaging, cut off the ends, remove any strings, wash them, and parboil them briefly. Then drain the beans and add them to the mushrooms in the pan. Add the tomato pieces as well and let everything sauté well.

  5. Then prepare a vegetable broth and dissolve the cream cheese in the still-hot broth. This cream cheese-broth mixture can now be added to the pan and mixed with the ingredients. Finally, add the tomato paste and the spices, season to taste, and it's ready.

Tips & Notes

Caution: clean the mushrooms only with a kitchen towel or a special brush and do not rinse them with water. The mushrooms absorb the water and lose valuable flavor. Tip: if you're in a hurry, you can of course use the canned or jarred variety instead of fresh green beans. However, you should make sure the vegetables are well drained before adding them to the pan.
