I bought Edamame Spaghetti, then left them sitting in the pantry for ages and picked them up again today. These noodles are rich in protein, fiber and healthy omega-3 fatty acids and are great for a low-carb diet. But what do you eat with them? What sauce?

I then did some research online to see what I could combine these healthy protein bombs with and came across Chicken Teriyaki. Since we really liked the recipe, I don't want to keep it from you:

Preparation

  1. For the sauce, put the ingredients in a tall bowl and mix either by hand with a whisk or, as I did, mix well with a small electric whisk.

  2. Finely chop the onions, carrots and garlic and sauté in a large pan.

  3. Cut the chicken into bite-sized pieces and add them to the pan as well.

  4. Cook everything together until lightly browned.

  5. Bring a large pot of water to a boil and cook the frozen soybeans until tender.

  6. Drain the water and add the soybeans to the pan with the meat and vegetables.

  7. Now pour the sauce over and bring everything briefly to a boil.

  8. The sauce should thicken a little.

  9. We made Edamame Spaghetti to go with it.

  10. Cook them in a large pot of hot water with a little salt for 3-5 minutes, drain the water and serve with the teriyaki chicken.
