Preparation
Wash and drain the lentils, boil for 5 minutes without salt or spices, and strain.
Peel the onion and finely chop it.
Wash and peel the vegetables.
Cut the carrots into small cubes and the potatoes into large cubes.
First sauté the onion in oil, then add the carrots, parsley and potato cubes.
Stir in the paprika powder, give it a brief stir, and immediately pour in the stock so the paprika doesn't become bitter.
Cook for about 10 minutes over low heat with the lid on.
Then add the lentils and simmer for a few more minutes.
Season with salt and pepper and serve.
