Preparation
Wash the trout fillet and pat dry.
Preheat the oven to 200 °C.
Mix lemon juice, oil, salt and pepper and brush the fillet with it!
Wash potatoes and vegetables and cut them into small pieces (especially the potatoes so they cook through).
Finely chop the herbs and mix well with the remaining vegetables.
Spread the potato–vegetable–herb mixture as a bed in the roasting foil, place the fillet on it and distribute the remaining juice over it.
Seal the roasting foil well, place it in the oven and cook at 200 °C for about 20 minutes. (Depends on the size of the potatoes and the thickness of the fillet.)
Remove the foil from the oven and preferably open it over a bowl so that the flavorful juice is not lost.
Tips & Notes
This dish needs very little salt and seasoning, as it cooks in its own vegetable juices. The flavor therefore depends on the amount and quality of the vegetables and herbs. Caution when opening the foil — steam will escape! Two to three servings can be prepared in one foil!
