Recipe of the month: roasted bread dumpling with egg & chanterelles

Tip: Roasted dumpling is a perfect leftover-utilization dish. Of course, any other vegetable is also suitable for it.

Use leftover potatoes or pasta instead of the dumplings!

Ingredients

Preparation

  1. Cut the bread dumplings into thick slices, clean the chanterelles carefully and don't cut them too small.

  2. Cut the spring onion, including the green stalk, into rings and finely chop the parsley.

  3. Heat oil in a pan and first sauté the spring onion, then the bread dumpling slices until they brown, then the chanterelles.

  4. Roast vigorously for a few minutes.

  5. Finally add the egg, season with salt and pepper, and garnish with parsley.

Tips & Notes

Roasted dumpling is a perfect way to use up leftovers. Of course any other vegetables also work. Use leftover potatoes or pasta instead of the dumplings!
