Tips: Cheese dumplings are ideal for portioning, keep for a few days in the refrigerator, and can also be frozen and thawed well.

Cheese dumplings taste best after a mountain hike in a hearty beef broth, on preserved sauerkraut, or with a crisp salad. Tyrolean grey cheese is also ideal: it gives the cheese dumplings an incomparably spicy taste and contains only 2 – 3% fat.

Ingredients

Preparation

  1. Mix the egg with the milk and spices well, pour over the dumpling bread, mix through and let soak.

  2. Grate the cheese or cut it finely and add it.

  3. Cut the chives into small rings and mix in.

  4. Bind the mixture with flour and let it rest for about 10 minutes more.

  5. Form small dumplings with wet hands, flatten them and slowly fry them on both sides in hot oil in a non-stick pan.
