Preparation
Cook the noodles in salted water.
Meanwhile, dice the onion and sauté in 1 tbsp oil until translucent.
Cut the cabbage into noodle-like strips and knead it with salt in a bowl until soft; let it sit for a few minutes.
Caramelize the sautéed onion with a little sugar (simply distribute the sugar evenly in the pan and wait until it browns — it only takes ½ minute), then lightly fry the cabbage with it and mix well.
After a few minutes, deglaze with a little vinegar (using different types of vinegar will change the flavor!).
Season with salt, pepper, caraway, and nutmeg.
If the cabbage is too dry, add a little broth, then reduce the heat and simmer covered for 5 to 10 minutes until tender.
Fold the cooked noodles into the steamed cabbage, mix well and adjust the seasoning.
1 tbsp sour cream, Cremefine or similar further enhances the flavor of the Krautfleckerln!
