Recipe of the Month – Curd Dumplings with Vanilla Ice Cream on Red Currant Coulis

Attention: The water must not boil under any circumstances, otherwise the dumplings will fall apart.

Tip: The longer the dumplings can poach in the salted water, the softer and fluffier they become.

Ingredients

Preparation

  1. Beat the quark with the egg until smooth and season with vanilla sugar and salt.

  2. Stir in the semolina.

  3. Now chill everything in the refrigerator for about 15 minutes and let it rest.

  4. In the meantime, pick the red currants from their stems and purée them.

  5. Use 2 tablespoons to shape the dumplings and gently poach them for about 10 minutes in lightly simmering salted water.

  6. Arrange the quark dumplings with vanilla ice cream and puréed red currants.

Tips & Notes
