Recipe of the Month – Spicy Noodles from the Wok

Total amount: 400-450 g wok noodles

Tip: It is best to prepare a mixture of the spices – about 1 tbsp full. Very suitable are: ½ tsp turmeric, ½ tsp cumin, ½ tsp paprika, ½ tsp salt, 1 pinch of pepper; mix and sprinkle over the dish and serve.

Ingredients

Preparation

  1. Clean the spring onion, wash and cut into coarse rings.

  2. Wash the bell pepper, cut into thin strips and stir-fry everything briefly in oil in the wok over high heat.

  3. Drain the sprouts in a sieve and rinse them, then add them together with the soybeans to the wok.

  4. Mix everything well and heat through.

  5. Add coconut milk and water, season well and bring to a boil.

  6. Stir the uncooked wok noodles vigorously into the vegetable-coconut mixture and cook until soft for about 5 minutes.

  7. Serve the noodles directly from the wok onto the plate, garnished with freshly chopped parsley or cilantro.

Tips & Notes

It's best to prepare a spice mix – about 1 tbsp. in total. Very suitable are: mix ½ tsp turmeric, ½ tsp cumin, ½ tsp paprika, ½ tsp salt and a pinch of pepper, sprinkle over the dish and serve.
